Rasa approaches her professional menu writing and cooking with the same energy and care that she put into catering her own wedding. She appreciates the opportunity to work closely with her clients and loves the challenge of creating customized dishes and menus. Years of experience have made her equally comfortable with gourmet vegan receptions, Indian-inspired meals, and multi-course omnivore creations.
Rasa cultivates her friendships with the farmers and artisans who provide her ingredients, and is always on the lookout for more local excellence. She is experienced in many styles of cooking, but often returns to the clean, simple European style she grew up with. In her menus she has the most fun creating delicious, beautiful appetizers and small plates. Everything on the Birchtree menu is a result of Rasa’s careful testing and tweaking of her own original recipes.
Allegra Fasnacht, Event Coordinator, Marketing/Development
From coordinating events to developing the business, Allegra keeps the company and her clients running on task and on schedule. Her efforts to reduce waste and encourage sustainability throughout all aspects of the company have earned Birchtree a reputation as a green business, with a goal of producing zero-waste events.
Always cool-headed and ready with a quick solution, Allegra manages all the day-to-day operations and handles the non-edible aspects of each event, from logistics and staffing to rentals and decor. A self-taught event planner and entrepreneur, her calm demeanor and business savvy are the perfect partner to Rasa’s creative genius in the kitchen.
